It’s a cooked pork dish.
The parts of the pig used are the head, tongue and rind. It is boiled in water for about 4 hours, boned and seasoned with salt, pepper, a mix of spices, lemon and orange.
Still hot in a synthetic cylindrical bag, it must be cooled and then it is ready to be tasted sliced. Excellent with the typical bland bread of Portico, is an excellent appetizer, aperitif or main course.
