The game is made up of volatile or terrestrial animals that become hunters’ prey. Among the volatos are included pheasants, quails and woodcocks, but among the terrestrials there are hares, wild boars and fallow deer.
The territory of Romagna Romagna is rich in game: this type of meat, accumulated with the “black meat”, has superior nutritional properties, compared to the bovine one, including a lower percentage of fat.
The game has the same cuts and the same cooking methods as the meat of the animals for slaughter. However, it is advisable to marinate this type of food before proceeding with cooking, in order to make it more tender and delicious.
